Our duty is a way of life, a brilliant expression of Italian culture;

It is truly an artisanal product, made according to the ancient rules of the sector and with the resulting characteristics. Industrial production involves the use of storage semolina and drying at high temperatures, with consequent pre-cooking of the product and hardening of the same. With this procedure the pasta is apparently more tenacious and resistant. For the procedure of production and drying that we set between 37 and 38 degrees, acquires a very porous structure, it has a dry residue and an above average lightness. Also for this reason, during cooking, it must be treated with care and delicacy. The result will pay off in how much you can verify the organoleptic qualities of our product and the high growth in cooking.


The term spices generally indicate aromatic substances of vegetable origin that they are used to flavor and flavor foods and drinks, and, especially in the past, used also in medicine and pharmacy. The spices coming mainly from the East, and now widely used all over the world, they owe their diffusion to the expeditions of great navigators such as Bartolomeo Diaz, Vasco Da Gama, Cristoforo Colombo and Marco Polo who strengthened relations with his expeditions trade with the East. Coming mainly from exotic places, spices are used today mainly to give an exclusive flavor to each recipe. Spices, fragrances and aromatic herbs are part of human history. They already came in the Neolithic era added to the foods they cooked both to preserve them and to flavor them. The roots, stems and leaves they increased the appetite and improved the taste of the very frugal cuisine. Salts and resins, such as salt from cooking and honey were useful for extending the life of perishable foods. The first document concerning spices dates back to about 3,000 years BC. and concerns the Assyrians. They said the gods, the night before creating the world, they drank sesame wine. Since today we know what this spice is originally from India, it means that even then there was a trade in spices.

HERBS: Aromatic herbs are essences containing a high percentage of essential oils and aromatic substances. Each harvested during its ideal balsamic period, they come successively dried, chopped and sieved and then used in the kitchen to enrich many recipes.

MUSHROOMS: Mushrooms, considered one of the greatest delicacies in the kitchen, are used for creation of numerous recipes. Once harvested and cleaned, the mushrooms undergo a dehydration process it allows to keep all their organoleptic properties unaltered.

The fully ripe fruits grown on our organic farm are transformed into precious jams, with the addition of very little sugar, or in some cases without sugar.
